The sausages taste salty and have a strong pork and smoky flavour. It has a better mouthful in terms of texture than a frankfurter as it has a higher meat content. Due to the natural smoking process, the casing will sometimes have uneven colour which you should not worry about at all; in fact, it is a tell tale sign that there is no colouring used.
