Razor clams are so called because their shape resembles a cut-throat razor. They are typically collected by hand. Razor Clams are usually available all year round, but are most abundant in the Autumn and Winter months. Razor Clams give a scent of British beaches! The meat at the foot of a Razor Clam is chewy, with a sand-like feel.
The center area of meat provides a sweeter, shellfish like taste and is slightly green in colour. At the tip of the Razor Clam is where the whiter, softer meat is found. The taste gives a sharp tang.
