Oven Roasted Sausage

Vegetarian ready to cook meal kit for 4 pax. All ingredients with recipe will be provided except for basic condiments, oil, salt, and pepper. Simple steps for beginners. Under 40 minutes.


  • 8 Victoria Crest Basic Chicken Banger Sausage
  • 2 Tbsps Olive Oil
  • 1 Onion, thickly sliced
  • 4 Cloves garlic , peeled
  • 1 red capsicum seeded and sliced
  • 1 yellow capsicum seeded and sliced
  • I Tbsp fresh rosemary
  • 250 gram cherry tomatoes
  • 1 Tbsp Tomato paste
  • 150 ml hot chicken stock ( 1 cube chicken stock dissolved in hot water
  • 1 Aubergine cut into 3 com chunks
  • 1 Zucchini


  1. Preheat oven to 200 C . Place the peppers, aubergine, zucchini, red onion and garlic in a large roasting tin. Drizzle over the olive oil , scatter with rosemary and toss together, them roast in the oven for 20 minutes
  2. Stir in the cherry tomatoes then sit the sausages on top. Return to the oven for 15 minutes
  3. Stir together the tomato paste and stock and pour into the tin. Increase oven temperature to 220C . Return to oven for a further 10 minutes until the vegetables are tender and the sausages are nicely browned and completely cooked through. Divide between bowls and serve with crusty bread
  4. Add salt to taste
